Sparkling Pineapple Daiquiri
Today’s cocktail is a great New Year’s edition inspired by my recent trip to Louisiana where I discovered rum, food, and culture. The primary reason for the trip was a visit to the Bayou Rum Distillery and while here we not only got to hold baby alligators and enjoy the different expressions they create but I also discovered that the brand creates some really great rums that I had previously not tried.
After this revelation and with a bottle of Bayou Silver Rum now in my possession, I started creating some really tasty cocktails and this special New Year’s Eve cocktail, in particular, stood out so I though I would share it with you. This is a twist on a classic Daiquiri with a little pineapple juice for a bump in flavor and because it’s for such a special night we decided it wouldn’t be right unless it had some Champagne to top it off.
Ingredients:
- 1.5 ounces Bayou Rum
- 1 ounce lime juice
- 1 ounce pineapple juice
- 1/2 ounce of brown sugar syrup
- Top with Champagne
Method:
- Add rum, lime juice, pineapple juice, sugar syrup, and ice to a shaker with ice
- Shake to chill and combine ingredients
- Strain into serving glass
- Top with Champagne
- Enjoy!
