Pineapple Americano
While in Merida, Mexico we took a little downtime and enjoyed some cocktails by the pool at our apartment. Throughout the day we mixed up a variety of delicious libations but this one stood out above the rest as it was delicious and beautiful. The classic Americano cocktail is comprised of equal parts Campari and red vermouth topped off with a splash (or more) of soda, but as we were experimenting with different flavors we decided to make it a little more tropical and substituted pineapple juice in place of the soda water and the result was fabulous. This cocktail has a combination of bitter, boozy and sweet that can be enjoyed any time of day throughout the year.
Recipe:
- 1 ounce Campari
- 1 ounce sweet vermouth
- 1.5 ounces of pineapple juice
Method:
- Combine all ingredients into a glass of your choosing
- Stir to mix the ingredients
- Enjoy!
