Papaya and Coconut Margarita

Today I wanted to share something to lift your spirits in a tropical way! One of my favorite tropical delights is the papaya fruit. When I first saw it in my local market in Seattle I was somewhat intimated to buy it. What is up with those black seeds and what can I use them with? After I took a chance I realized that it can be used the same as a mango. It is so good in salads, as a snack, and in cocktails. The sweetness and juiciness of this fruit make it ideal for a tropical escape Margarita. Want to escape to the tropics? Try this Margarita, it will transport you to the beach and sun no matter where you are located.

Ingredients:

  • 2 ounces of tequila
  • 1 ounce lime juice
  • ½ cup of papaya + more for garnish
  • 2 tablespoons coconut cream
  • 1 tablespoon shredded coconut for garnish

Method:

  1. In a blender add tequila, lime juice, papaya, coconut cream, and ice
  2. Blend until chilled and mixed
  3. Rim serving glass with shredded coconut
  4. Pour mixture into serving glass
  5. Garnish with papaya balls
