Cocktails with Camus

I have a number of favorite cognacs, it really depends on my mood, however, I love always having a bottle (or 2) of the Camus Intensely Aromatic series. In my opinion, it’s the use of a very special spirit-cutting process straight out of the still that is the most important part of this intensely aromatic series. Of course, that isn’t the only difference in the process, but for more information about that, I highly recommend checking it out on the Camus website, where they’ll have a lot more information about the entire process for you. For now, you should get yourself a bottle, taste it neat, then mix up the following classic variations.

Cognac Manhattan

Ingredients:

  • 2 ounces Camus VSOP Intensely Aromatic
  • ¾ sweet vermouth
  • 2 dashes aromatic bitters

Method:

  1. Combine all ingredients in a mixing glass with ice
  2. Stir to chill and combine ingredients
  3. Double strain into a Nick & Nora cocktail glass
  4. Garnish & Enjoy!

Camus Sour

Ingredients:

  • 2 ounces of VSOP Intensely Aromatic
  • ¾ lemon juice
  • ¾ honey syrup
  • 1 egg white

Method:

  1. Combine all ingredients in a cocktail shaker with ice
  2. Shake hard to chill and combine ingredients
  3. Strain out ice
  4. Shake hard again without ice to build great foam
  5. Double strain into a wine glass
  6. Dash bitters on top
  7. Garnish & Enjoy!
