Summer Mimosa

Ok, sometimes I want to host brunch at my house but coincidently the fact that it usually falls on Sunday morning it is usually a hangover city for me. This means I order a bunch of food from the local bakery. The other issue is my friends are like “oh hey you are a drink-making machine we love brunch at your house because we want fancy brunch drinks”. I am hung over and have zero motivation to mix up anything, especially a hard booze cocktail.

Now opening a popsicle wrapper and popping a bottle of champagne is a different story. So, to make my friends freak out and think I have done something special I make this recipe. Two Ingredients and a garnish if you are motivated enough to even do so. Buy fun flavors of popsicles (there are a lot of fresh fruit popsicles on the market you may want to avoid the regular kid pops because they are really sugary) then pour champagne, cave, or prosecco over them. I choose the traditional orange for the mimosa and they look so fun. I impressed my friends and they actually thought I took so much effort to plan out this brunch. Secrets don’t make friends or do they? Happy Brunching!

Ingredients:

  • 3 orange popsicles or your favorite flavor
  • 1 orange, sliced for garnish
  • 1/2 bottle of champagne, cava, or prosecco

Instructions:

  1. Add popsicle to serving glass
  2. Top with champagne, cava, or prosecco
