The weather in Seattle has been amazing the last couple days. Long sunny days are here and I can’t help but crave amazing tropical drinks to complement this change in weather. Also, the weather can change at any moment to dreary and rainy so you have to take full advantage when the sun peaks in. I recently became obsessed with pineapple in cocktails so I decided to create a Pineapple and Coconut Margarita to savor the sunny afternoon. This cocktail will make you feel like you have escaped to a little tropical island. Where would you want to escape to with this tropical cocktail?

Ingredients:
- 2 ounces of tequila
- 2 ounces of pineapple juice
- 1 ounce of coconut milk
- 1-2 teaspoons of agave nectar depending on how sweet you like your Margarita
- 1/2 lime juiced
- 1 cup ice (1/2 for shaker and 1/2 for serving) use more if neeed
Garnish: Coconut chips and mint sprig
Instructions:
- To shaker add ice, tequila, pineapple juice, coconut milk, lime juice and agave nectar
- Shake mixture and strain over ice into serving glass
- Top with garnishes
