Strawberry Rhubarb Mojito
Today I wanted to focus on another recipe that could also be used for everyday entertaining. The weather in Seattle has been amazing and I have had a real craving for tropical drinks.
The Mojito is one of my favorite cocktails to drink on vacation. When I was in Barcelona I had the most amazing Mojitos; the balance of ingredients was spot on and the crushed ice made the drink. This recipe is a spin on the classic Mojito because it contains strawberries and rhubarb. The strawberry and rhubarb in this drink provide a tangy yet sweet boozy drink. I like this drink because it makes me feel like I am on vacation. It’s also a special treat because it is so pretty with fresh strawberries and mint leaves. Ingredients:
- 2 ounces of white rum
- 1 ounce lime juice
- 1/2 ounce rhubarb syrup
- 1 strawberry
- 1 teaspoon strawberry jam
- 8 mint leaves
- Top off with club soda
Instructions:
- Fill the cocktail shaker with lime juice, strawberries, strawberry jam, rhubarb syrup, and mint leaves
- Muddle the mixture until the ingredients are married together
- Stir in rum
- Fill the serving glass with ice
- Add mixture to serving glass and top off with club soda
- Pour mixture into serving glass
- Garnish with lime
