Strawberry Rhubarb Mojito

Today I wanted to focus on another recipe that could also be used for everyday entertaining. The weather in Seattle has been amazing and I have had a real craving for tropical drinks.

The Mojito is one of my favorite cocktails to drink on vacation. When I was in Barcelona I had the most amazing Mojitos; the balance of ingredients was spot on and the crushed ice made the drink. This recipe is a spin on the classic Mojito because it contains strawberries and rhubarb. The strawberry and rhubarb in this drink provide a tangy yet sweet boozy drink. I like this drink because it makes me feel like I am on vacation. It’s also a special treat because it is so pretty with fresh strawberries and mint leaves. Make this Mojito today and transport yourself somewhere dreamy!
