Pistachio Fizz

Every Sunday my grandparents on my mother’s side get the family together for lunch and it becomes an all-day feast everyone brings a dish and hangs out so when I’m home in North Carolina I make sure to go and see everyone as much as I can. This week my aunt bought a variation of a southern delight called Pistacio Cool Whip Salad (I don’t know how it is considered a salad). It was absolutely delicious and was sweet like a dessert but is consumed as a side with the main entree. Anyway, the main ingredient is Cool Whip and with that, there were prominent flavors of pistachio (from somewhere) and pineapple.

I just had to make a cocktail that resembled it when I got home and thought a Fizz was the best way to bring all the flavors together and still have a good balance of sweetness and citrus. The pineapple was great for bringing balance and with the addition of lemon juice, it really cut through everything else and bought a citrus tang to the cocktail. I decided to use rum in the place of the gin for this concoction also as I felt it bought a little more character to the cocktail and the earthier tones worked great.

Recipe:

  • 2 ounces rum
  • ½ ounce lemon juice
  • 1 ounce pineapple juice
  • 1 ounce Monin pistachio syrup
  • 1 ounce cream
  • 1 egg white
  • Soda water (2 ounces)

Method:

  1. Combine all the ingredients in a cocktail shaker with ice
  2. Shake hard to chill and combine ingredients
  3. Strain out ice
  4. Shake extra hard to really build the foam
  5. Double/Fine strain into a cocktail glass
  6. Top with soda water
  7. Garnish & Enjoy!
