Peach Mojito Pops

Today I am sharing a recipe originally featured on Clinton Kelly’s website for frosty cocktails. I am sharing a popsicle in the form of a peach Mojito. I really wanted to make this recipe with summer flair and what could be more summer than ripe, juicy peaches? Put some booze in your popsicles to really enjoy yourself!

Ingredients:

  • ½ cup rum
  • 4 ounces of fresh lime juice
  • ¾ cup chopped peaches
  • 2 cups of limeade
  • 8 mint leaves
  • 6 wooden popsicle sticks

Serves: 6

Method:

  1. This recipe is based on 6 popsicle molds at 5 ounces each
  2. Mix all ingredients together then evenly divide the mixture into popsicle molds
  3. Chill popsicle molds in the freezer for about 20-30 minutes or until the liquid is slightly frozen
  4. Add wooden popsicle sticks and freeze overnight
  5. Run warm water over molds to loosen popsicles and serve
